Parwal ki Sabzi Preparation
Welcome to Maninee’s kitchen. Today we are going to make parwal ki sabzi without onion and garlic or pointed gourd ki sabzi. In Odiya and Bengali, it is called Potol. We will make it without onion and garlic. It will be useful for Pooja and fasting and for them who doesn’t eat onion and garlic.
Pointed gourd – 25gm
Potato- 5-6 medium size
Grated Coconut – 10gm
Cumin seeds – 1 teaspoon
Cinnamon powder – 1 teaspoon
Posto – 3 teaspoon
Curry powder – 1 teaspoon
Chilli powder – 1 teaspoon
Kashmiri chilli powder- 1 teaspoon
Turmeric powder- 1 teaspoon
Bay leaves- 3-4
Sugar- ½ teaspoon
Salt- according to taste
To prepare Parwal ki sabzi without onion and garlic we will first cut all the vegetable, peel off the potato and cut it into pieces. We will take the Cumin seeds, zinger, and cinnamon and grind them and make a mixture and will put it aside. Then take the grated coconut and posto and make them a paste and put it aside.
Take the pan and keep it on the gas stove. Then we will add 250gm refined oil into it. When the oil got heated add the pointed gourd or parwals into it. We will fry them in the oil for some time. When it will be fried then remove the pointed gourds out of the oil and keep aside it.
We will take the pressure cooker and add the pointed gourd, tomato, potato, turmeric powder 1 teaspoon and salt 1.5 teas poon into it. Add 200lit water into it. Heat the pressure cooker on the gas stove. Boil them till blow of 1 whistle. Then switch off the gas. Don’t remove the vegetables immediately keep it till it become cool.
Now we will heat the pan and add 4-5 teaspoon of refined oil. When the oil got heated add ½ teaspoon of sugar into it. When the sugar becomes red add the cumin seed, ginger and cinnamon paste into it. Then add curry powder, chilli powder, Kashmiri chilli powder and mix it well by adding a half cup of water. Then we will cook it for 5 minutes. Now we will add the posto and coconut paste into it.
Now remove the tomato from the pressure cooker and put into it. Mix it well and add 1/ teaspoon of sugar into it and mix them tomato well with the gravy and cook for some time. Now we will add the boiled pointed gourd and potato into the gravy. We mix the vegetables with gravy and cook it for some time.
Now the parwal ki sabzi or pointed gourd curry or potol tarkari without onion garlic is ready. You can take it with rice or roti or poori. We can take it as lunch or dinner.
